How to make a chicken curry?

A recipe for making a delicious chicken curry:

Ingredients:

500 grams chicken pieces (bone-in or boneless)

2 tablespoons vegetable oil or ghee

1 large onion, finely chopped

2 tomatoes, pureed

2 teaspoons ginger-garlic paste

2 teaspoons curry powder or a mixture of ground spices (such as coriander, cumin, turmeric, paprika)

1 teaspoon chili powder (adjust to taste)

1/2 teaspoon turmeric powder

1/2 teaspoon cumin powder

1/2 teaspoon garam masala

Salt to taste

Fresh cilantro leaves, chopped (for garnish)


Instructions:

Heat oil or ghee in a large, deep skillet or pot over medium heat.

Add the chopped onions to the skillet and sauté until they turn golden brown and caramelized.

Add the ginger-garlic paste to the skillet and cook for a minute until the raw aroma dissipates.

Add the chicken pieces to the skillet and cook until they are lightly browned on all sides. Stir occasionally to ensure even cooking.

Add the tomato puree to the skillet and stir well to combine with the chicken and onions.

Add the curry powder (or ground spices), chili powder, turmeric powder, cumin powder, and salt. Mix everything together until the chicken is well coated with the spices.

Reduce the heat to low, cover the skillet, and let the chicken simmer in the spice mixture for about 20-25 minutes or until the chicken is cooked through and tender. Stir occasionally to prevent sticking and ensure even cooking.

Once the chicken is cooked, sprinkle garam masala over the curry and give it a final stir.

Taste the curry and adjust the seasoning or spiciness according to your preference.

Remove the skillet from the heat and garnish the chicken curry with freshly chopped cilantro leaves.

Serve the chicken curry hot with steamed rice, naan bread, or roti. It also pairs well with flavored rice like biryani or pulao.
